  • Coffee is the most complex agricultural product on the market today. It is more complex than wine -- with over 900 flavor components!

  • Coffee is the second-most heavily traded commodity in the world, behind oil.

  • Only about 5% of the world's coffee crop meets the criteria to be considered for true "specialty coffee."

  • Just like wine, many factors affect the final flavor of coffee: growing conditions, harvesting, selection, roasting, and final preparation.

  • Individual coffees (called "varietals"), such as Kenya AAA, can vary significantly in taste and quality over time and even within the same harvest, due to these factors.

  • As with winemaking, it is not difficult for many people to try their hand at the process. However, just as with fine wine, it takes a master roaster to carefully select and prepare choice beans to obtain truly wonderful flavor.

  • Becoming a "Master Roaster" is a difficult and time-consuming process that requires training and innate skill. Few achieve this level of expertise.
